15 dl water
1 kg sifted rye flour
1 tbsp vinegar essence
1 tbsp salt
Bring the water to a boil, pour it in the stainless steel bowl. Add vinegar essence and salt and pour in the flour little by little. Start with the doughroller against the wall and control the dough with speed and the placement of the roller. Leave the dough overnight.
1 tbsp fennel seeds
1 dl of molasses
100 g of fresh yeast
1 kg of wheat flour
Attach the doughroller and knife and start the machine, add fennel seeds, molasses, yeast dissolved in a small amount of lukewarm water. and the wheat flour little by little. Run the machine for at least five minutes until the dough is well-kneaded.
Leave the dough to rise ( in something bigger the the stainless steel bowl) for 50 minutes.
Divide the dough into four pieces and shape into round loaves. Sprinkel with flour. Let rise for 50 more minutes under a towel. Bake the bread in 200 C for 50 minuters or until the bread is 98 C inside. Brush the bread with a mix of coffe and molasses.

The Ankarsrum Assistent Original can do really big batches! 2 liters of water, no problem. 5 kilos of dough, no problem ( you will have to let it raise in a bigger bowl though!) I prefer to use the doughroller. Attach it together with the doughknife in the stainless steel bowl. Add the full amount of liquid, and start the machine.
